It may be small with just eight seats at the bar. It may be hidden with a super secret door. But now the Cosmopolitan of Las Vegas has its very own speakeasy. Ghost Donkey debuts with a back bar stocked with mezcals and tequilas, serving novelty nachos to boot inside Block 16 Urban Food Hall.
Ghost Bar features New York City roots but waves the Mexican flag with its tasting flights of mezcals and tequilas as well as specialty crafted cocktails. The tequila-based Pistolero features roasted poblanos and pineapple, while the Mezcal Sun-risa combines mezcal and tequila with hibiscus and habanero.
On the late-night snack menu, the bar’s truffle nachos, as well as a carrot version with three spicy carrots variations, wild mushroom with a huitlacoche-mushroom puree, and a chorizo and tripe rendition.
Ghost Donkey joins Hattie B’s Hot Chicken from Nashville, Lardo from Portland chef Rick Gencarelli with its pork sandwiches, Pok Pok Wing from James Beard Award-winning chef Andy Ricker out of Portland with his specialty Ike’s Vietnamese fish sauce wings, homegrown Tekka Bar: Handroll & Sake with sake and handrolls prepared counter-side, and District: Donuts. Sliders. Brew. from New Orleans with its rotation of 100-plus flavors of doughnuts.
Ghost Donkey will be open daily from 4 p.m. to midnight Sunday through Thursday and 4 p.m. to 4 a.m. Friday and Saturday.
