Iron Chef Bobby Flay has been a fixture in Las Vegas with his Southwestern Mesa Grill at Caesars Palace and Bobby’s Burger Palace with crunch burgers topped with potato chips at The Shoppes at Crystals. Now he’s on the verge of opening his first new restaurant in five years at the Palms.
In March, the television personality plans to open Shark with a menu based on fish dishes. That means sushi and raw bar items, all with a Latin flair. The Palms is calling his menu “reflective of the evolution of Flay’s culinary voice.”
Aside from sushi and sashimi, ceviches, and tartares, “bold preparations of fish and seafood” make his menu that takes cues from South American, Mexican, and Mediterranean ingredients.
Flay’s debut next year is all part of at $620 million renovation of the westside resort. Coming up, Vetri Cucina from Philadelphia chef Marc Vetri brings an Italian voice to the hotel and casino, while Cleveland chef Michael Symon opens Mabel’s BBQ.
