Celebrity chef Michael Symon gets ready to debut Mabel’s BBQ right off the Palms casino floor in December, and now the Cleveland-based chef reveals a secret room as part of the restaurant.
Sure, the restaurant features his barbecue dishes such as smoked brisket and pork belly, served by the half pound, as well as sandwiches and sides. The Palms location will feature a back patio complete with games, local draft beers, and frozen cocktails. Also confirmed, a custom food truck, and space for live entertainment in the 9,183-square-foot space.
But this location includes Sara’s, what Symon dubs a first-of-its kind “Meateasy.”
Back in June, he told Total Food Service that the secret room with room for 54 diners would feature dishes such as prime rib, Peking duck, grilled lobster, table-sized desserts, and a raw bar, a total of 12 items. “We’re going to be very old school with waiters in suits, doing a lot of table-side preparations like carving the meats and very high-end cocktails.”
Symon named the space for his business partner Doug Petkovic’s mother, who recently died.
