Michael Symon Headed to Santa Fe Station Next?

Plans have been filed for a new restaurant in the northwest

A James Beard Foundation award- and Iron Chef-winning chef has been making plans to move into a Las Vegas resort, but not necessarily the first place that will come to mind for fans for the TV celebrity.

Michael Symon Play has been filing paperwork since June to remodel a large space at the Santa Fe Station, with an early proposal to add a patio dining addition. The latest round of applications were posted back in September.

Earlier this year, Michael Symon Restaurants began searching for a Las Vegas “Regional Manager” to “lead all restaurant operations” at future “outlets opening soon inside Station Casinos.”

The “Play” brand has not been previously used by the chef or his Cleveland, Ohio-based expanding empire, and neither Symon or Station Casinos have hinted at the possible project.

The first chance for locals to experience the Symon dining experience will be in December, when Mabel’s BBQ unveils its smoked brisket and pork belly specialties at the Palms. The roomy 9,183-square-foot space with a back patio has also created a “Meateasy,” a clandestine spin on a traditional private dining room.
