Citing plumbing issues and delays in county approval delays for the slide in a projected opening date, the breakfast burrito-focused My Huevos is now confidently predicting a November debut on the westside.

Located at the intersection of Sahara Avenue and Rainbow Boulevard and across the street from Hash House A Go Go, the 896-square-foot corner plot at at the Sahara Rainbow Center has installed its exterior signage and is finalizing the customizable menu.

Noticing a gap in the fast-casual market, the choices go beyond a standard bacon, or chorizo and egg burrito and will feature four different types of beans or potato, plus 27 specialty toppings, previewed to include spam, pineapple, and pork chili verde.

Among the “Family Jewels” collection of house-created burritos, chicken and waffles, sausage biscuits and gravy, and the chicken fried steak.
