By the time it meets its second anniversary, the eastside’s Pancho’s Vegan Tacos hopes to be operating two new bricks-and-mortar locations.
Both plan to debut by the end of the year. Pancho’s will begin serving its full menu of “100% vegan authentic Mexican food” in Henderson at 2540 Anthem Village Drive, a retail hub previously home to the now shuttered Sai Sushi and Giada’s Italian Cucina.
And 20 miles to the northwest, the under construction third outpost is planning to be ready by the end of December. It will move into the Apache Center at 3585 S. Fort Apache Road, not far from Spring Mountain Road and joining another future arrival, the highly photogenic menu of Zero Degrees.
Pancho’s already operates a mobile food truck it can put into service for special events and revealed on social media a move to Huntington Beach in Southern California is also in the works.
