Griddlecakes only recently debuted its third location over the summer, but is now confirmed to be headed back to Spring Valley for a fourth breakfast and lunch expansion.
The restaurant will replace the shuttered four-year old Bite Breakfast & Lunch at The Mall at Grand Canyon, sitting between Cinnaholic and Yoshi Burrito, close to the intersection with Grand Canyon Drive and Flamingo Road.
Already hard at work overhauling the 2,478-square-foot interior, the restaurant is confidently predicting it will debut before the end of January. Each previous outpost has been open daily from 7 a.m. to 3 p.m.
A hit in in Spring Valley and Henderson, Griddlecakes launched in North Las Vegas in August, bringing its large menu of omelets, skillets, melts, and the namesake, create-you-own stacks of griddlecakes, including “The Bluejay,” a lemon blueberry griddlecake, with blueberry compote and whipped cream.
