Mabel’s BBQ Sets Debut Date and Opening Hours

One of the biggest debuts of the year will make it in time to celebrate New Years at the Palms resort.

Celebrity chef Michael Symon will personally launch his first expansion to Las Vegas on Thursday, Dec. 20, importing a “beer, barbecue and Bourbon” menu from the original Mabel’s BBQ in Cleveland.

Filling a large 9,183-square-foot space, with the bonus of a large patio beer garden and a secret “Meateasy” dining room, the casual spot will be open from 11.30 a.m. to 10 p.m. Monday to Thursday, closing at midnight on Friday and serving from 10 a.m. to midnight on Saturday and 10 a.m. to 9 p.m. on Sunday.

An early menu peek reveals meats and ribs will be served with “pickles, kraut and white bread,” all served “‘til out.” Brisket, pork belly, J&J Kielbasa and pulled pork will be available by the pound.

“Ribs and poultry options” include smoked half chicken, pork spare ribs, “giant beef ribs,” smoked wings and turkey.

Side dishes of crispy tails, ears and salt & vinegar cracklin’ “pork parts,” join poppy-seed coleslaw, hot greens, smoked beets and a shareable portion of loaded fried potatoes.

Guests can also enjoy salads and sandwiches, plus tacos and a chopped brisket burrito.
