Originally promising a summer debut, the slow arrival of My Huevos’ custom breakfast burritos on the westisde finally has a firm opening date.
Announcing “a (secret) soft opening only for our Facebook and Instagram followers,” the breakfast and lunch restaurant will begin trial servings during “the last few days of December.”
Built around a B.Y.O.B., “build your own burrito” menu, My Huevos takes over an 896-square-foot corner at the intersection of Sahara Avenue and Rainbow Boulevard, across the street from rival breakfast specialists, Hash House A Go Go.
The variety of ingredient choices will result in “4000 possible burrito variations and give you full creative control over your meal,” with four different types of beans or potato, plus 27 specialty and unusual toppings, like spam, pineapple, and pork chili verde.
For diners who prefer a tried and tested combination, the “Family Jewels” collection of house-created burritos includes chicken and waffles, sausage biscuits and gravy, and chicken fried steak.
