Celebrity chef Michael Symon reveals his newest restaurant, Mabel’s BBQ, right off the Palms casino floor.
The Cleveland-based chef features a menu of smoked brisket and pork belly seasoned with a blend of Eastern European spices and served by the half pound; pulled chicken, brisket, or pork tacos with onions, cilantro, radish, lime, and cotija; and pig parts, with a platter of crispy tails, ears, and cracklings. Diners can order sides including baked beans, mac and cheese, and poppy seed coleslaw.
The restaurant also features limited edition bourbons and craft beers on tap from Nevada-based brewers.
Parts & Labor designed the space to look like West Side Market, Cleveland’s oldest food hall. Arched ceilings, exposed brick walls, and industrial lighting give it the feel of a traditional smokehouse. A back patio with games, local draft beers, and frozen cocktails also features a roster of tequila and agave-based spirits, a custom food truck, and space for live entertainment.
This location also includes Sara’s, what Symon dubs a first-of-its kind “Meateasy.”
The secret room with room for 54 diners would feature dishes such as prime rib, Peking duck, grilled lobster, table-sized desserts, and a raw bar, a total of 12 items.
Symon named the space for his business partner Doug Petkovic’s mother, who recently died.
