The Palms isn’t finished with all of the new restaurants and bars at the resort. In early 2019, the Palms plans to open Mr. Coco, a new bar with live piano music and small plates, from Francesco Lafranconi, executive director of mixology and spirits education at Southern Glazer’s Wine & Spirits.

The bar sits on the third floor of the resort’s Fantasy Tower.

When it opens on Jan. 11, customers will first receive what the Las Vegas Review-Journal describes as a “cocktail amuse bouche.” A truffle-infused Cognac and champagne come together in one cocktail, while chef Steve Benjamin, who left L’Atelier de Joël Robuchon at the MGM Grand in 2017, created the menu that include caviar served table side.

In 2019, the Palms plans to open Shark, a seafood restaurant from chef Bobby Flay, Greene St. Kitchen from Clique Hospitality, and dim sum from Tim Ho Wan, along with a nightclub and pool party, both already hiring for spring. Michael Symon’s Mabel’s BBQ debuted with a hidden “meateasy” earlier this month, while the Italian Vetri Cucina opened in November.
