On its way from Hawaii to the Desert Inn Road, Wayne’s Sushi found an ingenious way to gain a foothold in the local dining scene, by operating inside a successful and very long-running restaurant.
Sharing space inside the eastside’s Geisha House Steak & Sushi, close to the intersection of Desert Inn and Sandhill Roads, this location has been part of the Geisha House company since its inception in 1971.
Created by Wayne and Heidi Miyahira, the team’s original concept, Wayne’s Sushi Fresh Off The Boat, successfully operated a food truck out of an actual small fishing boat mounted on a trailer in Haiku, Hawaii, and quickly earned a reputation on the island for its sushi, rolls, tempura, and katsu dishes.
Unfazed by working out of unconventional spaces, the evolving Wayne’s Sushi menu already includes seared salmon with eel sauce, spicy tuna hand rolls, and “Screaming O” and “Itsy Bisty Spider” combination rolls.
