Come mid-May, the Palms introduces the city to two new nightlife venues from Clique Hospitality, and now both venues have a head honcho ready to stir up the cocktails. Mixologist Eric Hobbie leads the charge at Apex Social Club and Camden Cocktail Lounge.
Apex Social Club takes over the former home of Ghostbar spanning 8,000 square feet with its rooftop views of Las Vegas, while Camden Cocktail Lounge sits on the casino level with cocktails galore.
Hobbie’s resume includes stints with chefs such as Rick Moonen, Charlie Trotter, now disgraced Mario Batali, and Giada De Laurentiis, plus he helped open venues such as Jet at the Mirage, Playboy Club at the Palms, and Club Quo in Manhattan. Hobbie even work under Sam Ross for the opening of The Dorsey at the Venetian.

Already, Hobbie has worked the stick putting together a menu of cocktails including Sorbet & Bubbles at Camden Cocktail Lounge with Don Julio Tequila, St Germain, lemon and raspberry sorbetto, and Chandon Rose Champagne; the Fire & Ice with Hendricks Gin infused with jalapeño and sage, Meyer lemon juice, and Amarena cherry juice; and the Italian Stallion with Bulleit Rye, Cynar, Aperol, and Regan orange bitters.

Both are part of a $485 million renovation at the resort that brings celebrity chefs Bobby Flay, Michael Symon, and Marc Vetri as well as a 100,000-square-foot dayclub, nightclub,and restaurant Vandal from Tao Group.
