The fourth time’s the charm at the The Park at 3900 retail and office center on Paradise, as Nectaly Mendoza of Herbs & Rye begins work creating Cleaver Butchered Meats, Seafood & Cocktails.

Located inside the former corner home of red meat serving predecessors Ruth’s Chris, Kelly’s Prime Steak & Seafood, and Toscano Italian Steakhouse, Cleaver was announced last September and hoped for a winter or spring debut.

New paperwork has just been filed for the remodel, allocating an estimated $165,000 for the construction costs alone.

The substantial, 8,000-square-foot space, with ample parking out front, plans to butcher Angus beef in house, offer a meat and seafood menu, and import the style of cocktails that has made Herbs & Rye such a hit on the westside.

Featuring enough room for 300 customers across several dining rooms, the space will also add a large horseshoe bar and private dining room. A revised opening schedule has yet to be announced.

The retail hub on Paradise, between Flamingo Road and Twain Avenue, is home to a diverse, global selection of dining choices, including Sushi Way, Urban Turban, Satay Thai Restaurant, Japanese steakhouse Musashi, and the Mediterranean food of Marrakech.
