Aureole is about to change chefs again. John Church departs the French restaurant from Charlie Palmer at Mandalay Bay for the Stratosphere, where he takes over the corporate executive chef and head of culinary development for Golden Entertainment.
He replaces Joe Romano, who headed up the food and beverage for PT’s Entertainment, who moved to Bozeman, Montana, with his wife and pastry chef extraordinaire Megan Romano to open a restaurant.
Golden Entertainment bought the Stratosphere, which includes Arizona Charlie’s locations, last year. The company also owns PT’s chains across the state and casinos in Pahrump, Laughlin, and Fintstone, Maryland.
The Las Vegas Review-Journal reports that Church plans to tackle a new menu at Top of the World, the restaurant that revolves once every 80 minutes at the summit of the Stratosphere. A new steakhouse and a pub also make the agenda.
