The Border Grill Mexican Barbecue Spot Takes Shape

A quick-and-easy dining option at Mandalay Bay is on the way

It will be a lot simpler for time-conscious Mandalay Bay conventioneers to sample the much-loved Border Grill menu later this year when owners and celebrity chefs Susan Feniger and Mary Sue Milliken debut a very convenient take-out option a few steps from their 18-year old restaurant.

Set to be overseen by chef Mike Minor, who returned to the Border Grill family last year, the new space has begun construction under the working name of Burritos & Bowls. “Mexican BBQ” has been promised as an early menu highlight.

Forte Specialty Contractors, specialists in high-profile builds on the Strip, come to the project after finishing up their role at Gordon Ramsay Hell’s Kitchen. The site prominently sits on the pedestrian corridor linking the casino floor with the South Convention Center, the food court, and the Shark Reef Aquarium.

While other menu items have yet to be revealed, the fast-casual choices at Border Grill’s Los Angeles Airport outpost includes prepared salads, sandwiches, wraps, and a range of burritos with ingredients such as steak asada, Yucatan pork, and chile relleno.

An exact opening timetable has yet to be announced.
