RED ROCK RESORT — Emily Hansen takes over the kitchen at Masso Osteria, Scott Conant’s new restaurant at the resort, while Christian Pollock takes over as the general manager. San Francisco Bay-area native Hansen has more than a decade of culinary experience including six years operating her own business as a private chef. In 2016, Chef Hansen appeared as a finalist on Food Network’s Chopped, which features chef Conant among its panel of judges. Before she owned her own business, Hansen worked under chef Tyler Florence at El Paseo in Mill Valley, California, and Wayfare Tavern in San Francisco, as well as chef Daniel Humm at New York’s Eleven Madison Park and executive chef Mark Ladner at New York’s Del Posto. The Quest of Alain Ducasse showcases the chef behind Rivea as he travels the globe to find the best ingredients for the opening of Ore at Chateau de Versailles in Versailles, France in 2016. MIRAGE — Michael LaPlaca has resigned from his position as executive chef of Osteria Costa. His last day at the restaurant will be June 14. A spokesperson for MGM Resorts reports that a replacement has not been named. Osteria Costa opened in February. [EaterWire]

SOUTHWEST — Andre’s Bistro & Bar brings Kevin Lopez and Chris Bulen, who have almost 20 years combined experience working with namesake André Rochat, on board. Lopez, who now works as the chef de cuisine, worked under Rochat as a sous chef at the former Andre’s Restaurant & Cigar Lounge at the Monte Carlo in 2012. He also worked at the former Alex and now-closed The Country Club at Wynn Las Vegas, as well as Le Cirque at the Bellagio. Bulen worked in Rochat’s restaurants for nearly 15 years. The new executive chef worked at Alizé at the top of the Palms and Andre’s Restaurant & Cigar Lounge. The Culinary Institute of America grad joined Wynn Las Vegas in 2008 and has held numerous positions within the food and beverage department, including chef de partie and assistant chef for the resort, assistant executive chef of room service and assistant executive chef of The Buffet.
