THE DISTRICT AT GREEN VALLEY RANCH — Elephant Bar now has a new owner. The restaurant that filed for Chapter 11 bankruptcy protection last October is now opened by Las Vegas restaurateur Billy Richardson and his Gen3 Hospitality, which also has The Barrymore at the Royal Resort, Flour & Barley and Haute Doggery at the Linq Promenade, Holsteins at the Cosmopolitan of Las Vegas, and more. He tells the Las Vegas Review-Journal that he bought the chain last month, and plans to revamp the restaurant’s wall coverings and paint. The menu, which include dishes such as a pistachio crusted salmon salad, shrimp and chicken jambalaya, caramelized pear and Gorgonzola burger, and a butter cake, remains the same. {LVRJ]
