New details of the ramen restaurant headed downtown indicate the owners are hoping to seamlessly merge into the Fremont East neighborhood.
A spin-off of the recently debuted Shinya Maru Ramen & Izakaya on the eastside, Shinya Ramen will fill 2,718-square-foot right behind the craft beer and American pub menu of Eureka! A 257-square-foot outdoor patio on Sixth Street will add 18 seats right in the middle of the block, with views of the El Cortez resort across Street.
Inside, 92 seats will be placed in the dining room, including booths set against the walls and an additional 15 seats at the bar.
A “rock ‘n’ roll” theme will guide the project, featuring servers wearing band logo T-shirts, a curated soundtrack, and interior murals inspired by downtown architecture and the local music scene.
Operated by California’s Octopus Restaurant Group, the team behind H2O Poke & Grill at Hughes Center and Gen Korean BBQ House in Henderson and the westside, the original Shinya opposite the Hard Rock Hotel already names its ramen dishes around recognizable song titles.
Selections include the vegan “In Bloom’ dish, “Another Chicken the Wall” and “We Can Pork It Out” rice bowls, the coleslaw side, “I Slaw Her Standing There,” plus “I’ve Been Waiting for A Gyoza Like You” chicken dumplings.
No word on planned opening hours, or a completion date, but the company's William Chae has revealed Octopus plans to debut seven new restaurants, including a La Vegas expansion, within the next six months.
