A huge hit at its two Los Angles-based outposts, Hummus Republic is dramatically stepping up it expansion plans and wants to debut at least two, casual Las Vegas restaurants.
Created in 2014 and offering a build-your-own Mediterranean menu, the new franchise will first debut in Philadelphia within the next few weeks and is also promising it will open two Las Vegas locales and one in Reno.
Yet to reveal the exact local locations, its mostly plant-based menu features vegan fast-casual choices, plus chicken and steak for diners not yet willing to fully commit to the lifestyle.
Patrons have the option of creating pitas, bowls, or salads with up to three different hummus, dips, and spreads, such as tzatziki, olive hummus, and zesty feta dip. Then proteins such as falafel and vegan beef are added, followed by unlimited toppings and homemade dressing. Other selections include the vegan “earth Burger” served with sweet potato fries and the tahini shake, made with “chocolate, beet and spinach mint.”
A timetable for the Nevada arrivals has not been announced.
