The replacement for the shuttered Papaya King at Harmon Square plans to not only “reinvent” pizza, but also bring a poutine-focused menu to the eastside.
Fries N’ Pies will take over the 1,558-square-foot corner space at the retail hub at the intersection of Paradise Road and Harmon Avenue, across the street from the Hard Rock Hotel. The initial paperwork calls for an estimated budget of $74,000 to overhaul the rectangular property.
Among the operators, locals Adam Sadie and chef Josh Green, whose resume includes time at Mandalay Bay’s Aureole restaurant, the former Boa Steakhouse at the Forum Shops at Caesars, and the former Daniel Boulud Brasserie at Wynn.
Green is best known as the original partner and co-creator of the “live healthy” and “live happy” menus for SkinnyFats.
Still aiming for a spring debut, Fries N’ Pies has let very few details slip, but is expected to offer an inventive selection of toppings for both its pizza and fries.
Canadian chain Smoke’s Poutinerie was the last poutine-centric outpost to attempt to crack the local market, shuttering at Pawn Plaza after 10 months of business.
