Chef Errol LeBlanc is pushing to debut his latest venture by the end of May with a traditional menu of tapas choices and a robust cocktail program.
Pamplona Cocktails & Tapas will take over the shuttered, corner site of Cafe El Mundo Cubano at the rear of the retail center at 5781 W. Sahara Ave., a short drive from the intersection with Jones Boulevard.
LeBlanc is best known locally as the former executive chef and general manager at I Love Burgers, at the Shoppes at the Palazzo and the chef and owner of R.E. Tapas Kitchen & Lounge in the southeast, which operated from 2007 to 2009. R.E. Tapas served a menu of Italian cicchetti and Spanish tapas that has helped provide the inspiration for Pamplona.
Already promised, dishes from “the Canary Islands, Basque and other outlying regions.” On the drinks menu, expect mojitos, sangria, gin creations, café con leche, and a Jerez sour.
