Located right next door to Henderson’s first Steak’N Shake, a brand new, healthy-focused fast-casual concept is pushing to be ready by the first week of June.
Lacuna is encouraging future diners to “eat wild” at the recently completed Sansone St. Rose Coronado Office Park annex, close to the intersection of St. Rose and Paseo Verde Parkways.
Expecting to expand around the region, Lacuna is promising “made from scratch and fresh-to-order” dishes, featuring “antibiotic and hormone free” ingredients and “no hidden” extras.
Currently hiring and telling future staff to prepare for a “June 1” launch, the menu features the house “lacuna” choices such as the “Keep Calm and Vegan On,” made with “roasted sesame tofu, braised black beans, mild quinoa, shredded carrot, and raw pecans on patch-picked cabbage” and the “Machu Picchu” prepared with “spiced quinoa, sweet cranberries, avocado, cucumber, and toasted garlic chickpeas on whole leaf spinach.”
Diners can also create their own combinations of greens, vegetables, fruit, seeds, nuts, and cheeses, plus “staples” including spicy broccoli, “prime southwest flat iron” steak and “Herb Dusted Mary’s free range chicken breast.”
Future hours have yet to be revealed.
