An open kitchen is no longer a restaurant novelty, but New York’s BBD’s is going one stage further and building a “fully visible and functional butcher room” at its Palace Station expansion.
Recently announcing on social media that the restaurant was hoping for a September debut, chef Ralph Perrazzo’s beers, burgers, and desserts concept will let diners keep an eye on the kitchen’s “meat-processing capabilities,” plus the “custom wood and charcoal-burning grill,” described as a “beast.”
Now hiring, the 200-seat BBD’s Las Vegas is being built from scratch, with impressive early renderings hinting at an imposing wooden arched ceiling, custom chandeliers, and a large, long bar.
A former alum of Bradley Ogden at Caesars Palace, Perrazzo will join new lunch-and-dinner restaurant Boathouse Asian Eatery, Tony’s Grab & Go, and upgrades to the Feast Buffet, all set to be revealed later this year.
