Barry Dakake is back, baby, grilling up steaks at his latest restaurant in Las Vegas. The beloved chef behind N9NE Steakhouse at the Palms, which closed last year, now has Scotch 80 Prime at the resort, complete with wood textures, chocolate leather-tufted booths, and a chichi collection of fine art throughout the restaurant.

Diners can even look out a large window that overlooks Flamingo Road or sneak outside to a green hedge enclosed outdoor patio. An outstanding art collection includes pieces from Jean-Michel Basquiat in the private dining room, Andy Warhol, KAWS, Damien Hirst, and Scott Hove.

This classic take on the steakhouse tips its hat to Las Vegas’ Scotch 80s neighborhood, an 80-acre plot of land north of the resort that was purchased in the early 1900s by the city’s first mayor, Peter Buol. Scottish investors funded the land buy that became home to Las Vegas icons such as Howard Hughes, Jerry Lewis, and former Mayor Oscar Goodman and his wife, current Mayor Carolyn Goodman.

Dakake brought former Alizé chef Mark Purdy on board as executive sous chef to cook up USDA Prime Beef, certified Japanese Kobe beef, chicken, chops, and seafood. Dishes include the rib cap, also known as “Chef Barry’s Steak;” a Tomahawk rib-eye steak; Colorado bison filet mignon; and A5 Japanese Kobe, all sourced from Double R Ranch in Washington and Chicago’s Linz Heritage Angus.

Over-the top creations include a mesquite-fired crustacean tower, dazzling the dining room when it arrives with Maine lobster, white Mexican shrimp, New Bedford sea scallops, Spanish octopus, Alaskan king crab, and steamed New England little neck clams on a circular custom flame lit vessel. Diners can order the Russian Baller caviar tower with vodka shots or a banana split served table-side.

Other must-tries include classic Manhattans or Old Fashioned served from a custom table-side cart. The $3 million whisky collection, led by Scotch Master Cody Fredrickson, features Macallan Fine & Rare Vintage collection.
