A Mediterranean Fast-Casual Restaurant Hatches in Las Vegas This Summer

A new fast-casual chain of Mediterranean restaurant looks to take over Las Vegas this summer when Bok Bok Chicken launches. Three restaurants in North Las Vegas, near Summerlin, and in Green Valley Ranch plan to hatch with a menu of rotisserie chicken, beef shawarma, falafel, and made-in-house pita bread.

Bok Bok founder Silva Chamanian says the three locations at 7501 W. Lake Mead Blvd., Suite 100; 725 S. Green Valley Parkway, Suite 150; and 6572 N. Decatur Blvd., Suite 100 will feature modern looks with space ranging from 1,100 to 2,400 square feet. Each offers between 36 and 55 seats.

Bok Bok Chicken plans to serve sandwiches including pitas and paninis, plates with a choice of hummus or mutabbal, an eggplant dip. Sides include falafel, fattoush, hummus, sarma stuff grape leaves, a tahini salad, and toom, a garlic sauce with lemon. Baklava, asthma (a shredded file pastry with sweet cream), and gatnaboor (rice pudding with cinnamon and rosewater) wrap up the desserts. Tan and sumac lemonade also make the menu.
