A trio of fast-casual options headed to North Las Vegas will congregate around the northern section of the Crossroads Towne Center, easy to find at the intersection of the 215 and North Decatur Boulevard and all set to debut by the end of summer.
A local favorite for breakfast and lunch, a third outpost for Griddlecakes is under construction, next door to a Roberto’s Taco Shop. Progress is well underway on the 1,777-square-foot corner site. On the full menu, omlets, skillets, melts, and the namesake, create-you-own stacks of griddlecakes that can be customized with flavors including “funfetti,” “red velvet,” and “white chocolate raspberry.”
Already serving in Spring Valley and Henderson, an earlier move to the northwest on Jones Boulevard was replaced by Stacks & Yolks back in 2016. The two current Griddlecakes locations are open daily from 7 a.m. to 3 p.m.
In the same section of the retail hub, the creators of the first boba tea store to launch in Las Vegas will debut a sixth local expansion within the next few weeks. No. 1 Boba Tea will offer a menu of flavored teas, smoothies, and slushes on the other side of Roberto’s and fill 1,469 square feet.
And a short walk away, crews are quickly preparing the arrival of Bok Bok Chicken, a chain of Mediterranean restaurants that offers rotisserie chicken, beef shawarma, falafel, and made-in-house pita bread. The large, corner space takes over the 2,100-square-foot, suite 100, formerly occupied by a Starbucks.
