Wolfgang Puck’s Spago makes its highly anticipated return, taking over the former Olives space at the Bellagio. Now open, the restaurant dishes out pizzas topped with salmon and caviar, à la carte dishes, and a Best of the West multi-course California Tasting Menu.
The restaurant paved the way for the celebrity chef trend in Las Vegas when Puck opened the restaurant at the Forum Shops at Caesars in 1992. In January, he closed the Forum Shops location in favor of a new locale in the former Olives space overlooking the Fountains at Bellagio.
Fans can expect a few surprises. The menu includes a little bit of the old paired with newcomers. Tuna cones, wiener schnitzel, and salmon pizza return to the menu, while a new tank featuring live Santa Barbara prawns brings that ingredient to dishes. The tasting menu arrives soon.
