Hussong’s Cantina gets a Top Chef twist on its latest menu. The location at Mandalay Place teams up with chef Katsuji Tanabe from Bravo’s Top Chef Season 12 on a new menu that starts dishing on Friday, May 11.
New dishes include lump crab guacamole served with orange supreme, serrano, and radish; chicharrones made of fermented chile and maple syrup; braised octopus served with Peruvian beans, chorizo, and garlic crema; rock shrimp and suadero tacos made with serrano aioli and charred onion relish; half pig head carnitas tacos served with pickled vegetables and salsa quemada; pork belly tacos with miso glaze, slaw, and chile cucumbers; filet fajitas with yellow mole, shishito peppers, and braised onions; and tempura red snapper served with bitter greens salad, heirloom tomato and avocado. Menu items start at $10.
Tanabe, who was born and raised in Mexico to a Japanese father and Mexican mother, blends his cultural backgrounds with this men. The chef was part of the inaugural season of Top Chef: Mexico and Bravo’s Top Chef All Stars. He recently opened The Nixon Chops & Whiskey, a Mexican steakhouse, in Whittier, California.
Tanabe plans to be on hand on May 11 to meet customers from 5 to 7 p.m.
