Promising the “most authentic ramen in Las Vegas, straight out of Japan,” the second local Shinya Maru Ramen & Izakaya from California’s Octopus Restaurant Group has debuted on Fremont East.
Translating “Shinya” as “late in the night,” the 2,718-square-foot restaurant sits behind the craft beer and American pub menu of Eureka!. A planned 257-square-foot outdoor patio on Sixth Street will add 18 seats facing the El Cortez resort across the street.
General manager Nathan Asamoto’s extensive experience in Los Angeles includes Takasan, Tentenyu Ramen, Men Oh Ramen, and Ramen Champ. In Las Vegas, Shinya will follow the menu and “Rock ‘n’ Roll” style of the original location at the intersection of Harmon Avenue and Paradise Road, across from the Hard Rock Hotel,
On the menu, “We Can Pork It Out” and “Another Chicken the Wall” rice bowls join izakaya-inspired selections, such as the “Call Me Chicken Karaage,” plus a chicken dumpling dish named “I’ve Been Waiting for A Gyoza Like You.”
Ramen dishes include the $11 “Killing Miso Softly,” created with “sugar, spice, and everything nice” and the $10 “Shoyu What Tonkatsu Is,” made with “pork chasu, egg, kikurage, corn, bean sprout and green onion.”
The Octopus Restaurant Group also operates H2O Poke & Grill at the Hughes Center and Gen Korean BBQ House in Henderson.
