Blinders Burgers & Brunch gives vegetarians a sneak peek of its “junk food” meat-free menu when it debuts this weekend. The restaurant takes over VegeWay’s all vegan drive-thru at the intersection of Centennial Parkway and Durango Drive.
Blinders features non GMO, all-natural, and local ingredients in its dishes. On Monday, the restaurant plans to dish out free Impossible Burgers to the first 100 diners from 8 to 10 a.m.
Owner Shantell Connor tells diners to start with a choice of patty, the Impossible Burger, a superfood veggie burger, or the Beyond Burger. Options include the Cha Cha with Virgin Cheese Sriracha cheddar, topped with crunchy tortilla strips and served on a pretzel bun; a Shakin’ BAE-con with Herbivorous Butcher hardwood smoked bacon with cheddar and a vegetarian-based mayo; and the Bleu Moon topped with Virgin bleu cheese crumbles and onion rings on a sesame seed bun. Side dishes include rosemary fries and onion rings.
The restaurant also features salads and sandwiches such as The Knockout using No Butcher pulled pork with a barbecue sauce and slaw on a ciabatta bun, a Herbivorous Butcher bratwurst topped with grilled onions and a tangy relish, and the Gobbler No Butcher turkey and cheddar cheese.
Gluten-free buns can be requested.
While brunch kicks off in August, breakfast includes dishes such as a breakfast burrito stuffed with tofu, bell peppers, potato, salsa, spinach, and cilantro, or the Mornin’ Muffin with a warm tofu and potato patty, topped with cheese on an English muffin.
The restaurant plans to be open from 8 a.m. to 9 p.m. weekdays and from 10 a.m. to 3 p.m. on weekends.
