Belgian waffles combined with American ingredients are headed to the Spring Valley next month, when Lucy’s Waffles & Ice Cream replaces a shuttered frozen yogurt store at the Rainbow Pavilion retail center.
Located at the northeast corner of Rainbow Boulevard and Patrick Lane, a specialty will be ice cream sandwiches created with the warm waffles. Serving next door to Firehouse Subs and across the parking lot from Jaburritos, the space was previously occupied by the four-year-old Tops N Bottoms Frozen Yogurt and features easy-to-spot arched windows.
Set to launch on Aug. 11, opening hours have yet to be announced, but guests can expect “breakfast for dessert” combinations including waffles, fruity pebbles, sprinkles, and Nutella.
Also at the retail hub, a replacement has yet to be revealed for Pie Me Over, the chicken pot pie specialists that shuttered earlier this year. The owners have relocated to Massachusetts.
