Nicole Brisson, the former culinary director for B&B Hospitality Group, just became the new executive chef at Eataly, opening at the Park MGM this November. The former executive chef at Carnevino at the Palazzo and chef di cucina at Otto Enoteca e Pizzeria at Grand Canal Shoppes, which both closed last weekend, helped open Wynn Las Vegas with chefs Steven Kalt and Paul Bartolotta.
Eataly will fill approximately 40,000 square feet on the southern edge of the resort and The Park-facing side will become the main pedestrian entrance into the Park MGM casino.
Already promised from Eataly, a marketplace with cafes, to-go counters, and sit-down restaurants interspersed with high-quality products from sustainable Italian and local producers, known to include pasta dishes, pizza, and a bakery.
Brisson also becomes the first chef appointed to the board of directors of the Southern Nevada Health District, serving as a member-at-large on the board for two years.
