Celebrity chef Michael Symon is right on target to unveil Mabel’s BBQ in Las Vegas later this year and is sharing a hint of what to expect, inside and out, off the Palms casino floor.
Currently hiring, Symon is confirming a December debut for the roomy 9,183-square-foot restaurant, also featuring a large patio beer garden. Back in July, the original construction budget was estimated at $4,409,478.

Launched in April of 2017, the Cleveland original proved a runaway hit, upgrading the menu with a generous stock of whiskeys and bourbons. The house specialty remains meat smoked “over local fruitwood,” plus sides of “Cleveland pickles, Cleveland kraut and rye bread” and a secret ingredient to create a unique flavor, the addition of “Bertman’s Ballpark Mustard into the barbecue sauce.”
Earlier this year, the restaurant applied for permission to park a semi-permanent food truck on the patio, serving a portion of the barbecue menu to late-night revelers and private diners after the main kitchen had closed for the night.
