Bromberg Brothers Swap an Izakaya for a Sushi Restaurant in Summerlin

Last summer, Blue Ribbon’s Bruce and Eric Bromberg planned to open an izakaya at Red Rock Resort. Now comes word that instead, the brothers swapped out that idea for Blue Ribbon Sushi Bar & Grill, opening Jan. 25 in the former home of Libre Mexican Cantina, which closed at the end of June.

The brothers’ sushi restaurant features an indoor/outdoor dining experience that includes a traditional 12-seat walnut sushi bar, a roofed cocktail bar with patio seating, and a Kanpai Garden, an outdoor beer garden.

The brothers brought in executive chef Fernando Sposato and executive sushi chef Setsuji Mitsui to make dishes such as Blue Ribbon-style fried chicken with wasabi honey; a half rack of Duroc pork ribs with black vinegar glaze, crispy rice, and bacon bits; oxtail fried rice with braised oxtail, daikon, shiitake mushrooms, bone marrow, and egg; and salt and pepper shrimp with lemon ponzu and spicy lettuce.

Blue Ribbon Sushi Bar & Grill joins the most recent restaurant opening at the resort, Scott Conant’s Masso Osteria, at the front.

The Brombergs also have Blue Ribbon Brasserie at the Cosmopolitan of Las Vegas, Brooklyn Bowl at The Linq Promenade, and Blue Ribbon Fried Chicken at the Grand Bazaar Shops.

The original Blue Ribbon Sushi Bar & Grill closed at the Cosmopolitan in January 2015 to be replaced by Zuma.
