The Palms continues to redefine its cocktails with a new lounge opening on Jan. 25. Mr. Coco brings live piano music and small plates from Francesco Lafranconi, the former executive director of mixology and spirits education at Southern Glazer’s Wine & Spirits. He named the bar that sits on the third floor of the resort’s Fantasy Tower for his dog.
The experience starts with a cocktail amuse bouche handed to customers before they even step food in the elevator. While the cocktail menu is still in the works, potential drinks include the eponymous with Cîroc coconut vodka, Plantation XO rum, O.M organic coconut lychee liqueur, Funkin coconut puree, lemon juice, Gomme syrup, Australian bitters, and a Luxardo amaretto mix; All About the Benjam’n with Ford’s gin, Fever Tree elderflower tonic, BitterCube grapefruit and cucumber bitters, and Montanaro Bianco vermouth; and Truffles and Bubbles with H by Hine cognac, Pineau de Charente, St-Germain liqueur, Verjous Blanc Lanson, and topped with Black Label champagne. Special concoctions range from margaritas, pisco sours, daiquiris, and caipirinhas to Moscow mules, Singapore Slings, and mojitos.
Chef Steve Benjamin, who left L’Atelier de Joël Robuchon at the MGM Grand in 2017, and currently oversees the food and beverage at the Waldorf Astoria in Los Angeles created the menu that include caviar served table side. Bites include Gruyere cheese puffs, hamachi and salmon with crispy rice, and smoked salmon with a baguette with dill.
Savory dishes include an eggplant caviar confit with pita, cumin seeds, raz el hanout and tomatoes coulis; a charcuterie and cheese platter; one ounce of Osetra caviar for $145; foie gras torchon; and the signature dish, chilled capellini pasta.
In 2019, the Palms plans to open Shark, a seafood restaurant from chef Bobby Flay, Greene St. Kitchen from Clique Hospitality, and dim sum from Tim Ho Wan, along with a nightclub and pool party, both already hiring for spring. Michael Symon’s Mabel’s BBQ debuted with a hidden “meateasy” in December, while the Italian Vetri Cucina opened in November.
