Arriving with a resume that includes training from chef Alice Waters and time spent alongside Michael Mina at San Francisco’s Aqua, chef Jimi Lasquete is moving from Hawaii to Tivoli Village to debut Kuyas, an oyster- and martini-focused restaurant.
Promising an “immersive experience dining” and a menu of “international fusion cuisine,” Lasquete was most recently seen at the Lānaʻi City Bar & Grille in Lānaʻi City, Hawaii.
Planning for a debut later this year, posted design sketches reveal a large central bar and seating facing an open-plan kitchen. The restaurant takes over the former Kabuki space at the outdoor shopping center.
Yet to preview a full menu or firm opening date, future opening hours have already been posted, with the restaurant expecting to serve a taste of the “Pacific Rim” from 11 a.m. to 2 a.m. daily, and hinting at a possible weekend brunch service with an earlier 10 a.m. opening on Saturday and Sunday.
