Blue Ribbon Sushi Bar & Grill makes its return to the Las Vegas dining scene tonight when the restaurant from the Bromberg brothers opens inside Red Rock Resort tonight.
Brothers and chefs Bruce and Eric Bromberg bring an all-new Japanese-style restaurant and bar featuring an indoor and outdoor dining experience complete with a traditional 12-seat walnut sushi bar, a roofed cocktail bar with patio seating and an outdoor beer garden known as a Kanpai garden.
Executive chef Fernando Sposato and executive sushi chef Setsuji Mitsui head up the kitchen that serves Blue Ribbon-style fried chicken with wasabi honey; a half rack Duroc pork ribs with black vinegar glaze, crispy rice, and bacon bits; oxtail fried rice with braised oxtail, daikon, shiitake, bone marrow, and egg; and salt and pepper shrimp with lemon ponzu and spicy lettuce.
Japanese-inspired favorites include crispy rice with spicy tuna, avocado, truffle oil, and eel sauce; maguro zuke, a soy marinated tuna; mizuna and Asian pear salad; pork belly teppan with upland cress and pickled red onion; tuna poke with wakame and scallions; Kagoshima A5 wagyu dishes; omakase sushi; and sashimi platters. Wine, beer, sake, and cocktails make the list as well.
Last summer, the Bromberg brothers planned to open an izakaya at Red Rock Resort, but recently, they swapped out that idea for Blue Ribbon Sushi Bar & Grill in the former home of Libre Mexican Cantina, which closed at the end of June.
The original Blue Ribbon Sushi Bar & Grill closed at the Cosmopolitan in January 2015 to be replaced by Zuma.
