Famed Hawaiian casual-dining institution Zippy’s updated the progress of its expansion to Las Vegas last month and this weekend, eager Ninth Island fans can preview a taste of the future menu.
From Oct. 4-6, Zippy’s will be running a booth at the 14th Annual Pure Aloha Festival on the grounds of the Silverton Casino Hotel and bringing its popular Portuguese bean soup, prepared with sausage, pasta, and vegetables.

Sporting a new logo for its combination 7,000-square-foot restaurant, take-out, and retail bakery headed to the southwest, company president Paul Yokota has publicly estimated a “third-quarter opening” next year, hoping to be serving up plate meals, chili, and the legendary Zip Pac meals sometime before Sept. 30, 2020.
The restaurant will be built from scratch at the southeast corner of Badura Avenue and Montessouri Street, near Rainbow Boulevard and a short distance from the huge Arroyo Market Square retail center. A separate 12,000-square-foot central kitchen and bakery will also be constructed to support even more Zippy’s outposts planned for the region
