Shirley Chung, the former Las Vegas-based chef who appeared on Top Chef New Orleans and Top Chef Charleston, where she was the runner up, returns to the city to host a pop-up dinner in December. Chung, who worked at China Poblano at the Cosmopolitan of Las Vegas, among other restaurants in Las Vegas, kicks off Cosmopolitan’s new Paired culinary series on Saturday, Dec. 7, at 7 p.m. at Red Plate.
The $125 dinner features matsutake mushrooms with steamed egg custard and matsutake consommé; Beijing lamb belly with braised, pressed, roasted lamb belly, spiced sesame sauce, and Napa cabbage heart; Australian lobster tail foie gras; and coconut tapioca pudding with dragon fruit, mango, condensed milk, and passionfruit snow, as well as two courses from Red Plate. The dinner includes Red Plate cocktails and wine from Ao Yun, a cabernet from the foothills of the Himalayas.
Chung partnered with her husband Jimmy Lee to open Ms Chi Cafe in Culver City, California, a year ago.
Cosmopolitan plans to make the Paired culinary series a recurring event with different guest chefs.
