Kris Parikh and his wife Bindi have been the force behind the eastside’s Mint Indian Bistro since 2008, as well as its expansion to Spring Valley in 2016. Now the team heads to the Strip with a new specialized concept.
Divine Dosa promises to be coming soon, with paperwork revealing the restaurant will head into the Gold Key Shops retail center, a longtime home to Tacos El Gordo and a walkable distance from Encore Las Vegas.
After undertaking a culinary tour of India to seek inspiration for the forthcoming menu, Kris Parikh is planning to features dosas, biryani rice dishes, curries, kebabs, and Indo-Chinese choices.
Parikh previously merged India and Mexican fast casual dining at the now shuttered Desi Burrito drive-thru, a short distance from Mint’s original Flamingo Road location.
The Indian bistro continues to serve thin, crisp, stuffed or plain dosas prepared with fermented rice and lentil batter at both its restaurants.
Parikh did not reveal a specific opening date or future hours for Divine Dosa.
