Careful to avoid comparisons, or any direct reference to its shuttered predecessor, Eddie’s Mexican Restaurant has debuted its own spin on a long-standing family favorite menu and staffed with former Macayo Vegas employees.
Originally called the Blue Macaw, Eddie’s replaces the former Famous Dave’s Barbeque at 9695 W. Flamingo Road, close to the intersection of the 215 and Flamingo Road.
Decorated a with a blue-tinged palette and offering seats at the bar, or in booths inside the main dining room, the large 7,200-square-foot restaurant has kept the tradition of generous portions, potent cocktails, familiar chips and salsa, plus a version of a TCT, toasted tortilla, smothered in a cheese blend.
Among the plentiful menu choices, loco burritos, appetizers, fajitas, huevos rancheros, tacos and enchiladas, chimichangas, Baja pizza, and specialties including shrimp diablo, the $13.49 pollo verde, a $14.99 carnitas dish, and the steak ranchero stuffed with green chiles and covered with mushrooms and queso sauce.
