Island Comfort counts down to the debut of its Chamorro-inspired menu, a rarity even in the highly diverse Las Vegas dining scene, in northwest Las Vegas.

Moving into the Craig Discount Mall at the intersection of Decatur Boulevard and Craig Road, the casual-dining space will celebrate a grand opening on Saturday, Nov. 9, with a chance of preview service launching earlier in the month.

Island Comfort plans to build its Guam-influenced menu around starches, proteins, and plates. On the future menu, starters of wings, poke, smoked meats, lumpia, and the perennial favorite shrimp patties.

Spam or corned beef fried rice can accompany chicken thighs with the skin left on, short ribs, pork chops, and sides of gollai hågun suni (taro leaves stewed in freshly squeezed coconut milk) or kelaguen, similar to ceviche.

Among the plate lunches, an island surf and turf combination, featuring red rice, shrimp, and an 8-ounce rib eye steak, or the cured beef, tinala’ katne option.

The restaurant is projected to be open daily from 10 a.m. to 7 p.m. and closed on Tuesdays.
