Revealed back in May, but nameless until now, Enrique Olvera, Daniela Soto-Innes, and Santiago Perez will debut the “high-end Mexican cuisine” restaurant Elio at Encore Las Vegas in early 2020.
Currently hiring and also hosting dormant Instagram and Facebook accounts, the 6,908-square-foot Elio will replace the pan-Asian menu at Andrea’s with “a restaurant that embraces the showmanship of the city not just with celebratory food, but also in the design and ambiance.”
The same team is behind previous hit projects Cosme and Atla in New York City and the Californian-Mexican Damian, set to open in Los Angeles’ Arts District later this year. Olvera further expanded his global recognition in 2000 with the launch of the award-winning Mexico City restaurant, Pujol.
Aiming for a debut in the first quarter of next year, hints of Elio’s “high-energy social atmosphere” can be found in the list of comparable “industry benchmarks” provided to prospective employees, including Zuma and STK at the Cosmopolitan, Carbone and Mamma Rabbit at Park MGM, Javier’s at Aria, Greene St. Kitchen at the Palms and one of the hottest influences on the Las Vegas Strip’s dining scene, David Grutman and Pharrell Williams’ Swan in Miami.
For the menu, chefs Soto-Innes and Olvera are so far promising Elio’s “dishes are rooted in Mexican ingredients and flavors and prepared according to time tested and specialized Mexican techniques.”
