The local obsession for poke bowls may have cooled in recent months, but a rapidly expanding national franchise has a secret weapon on its menu to lure customers to its first Las Vegas outpost.
Island Fin Poke Co. is pushing for a mid-December debut at the Boca Park, slotted between a Starbucks and a Jersey Mike’s Subs store.
Based around a build-your-own poke bowl menu, customers in six other states are also dropping in to enjoy a cup of soft-serve Dole Whip for dessert.
Expected to be open daily from 11 a.m. to 9 p.m., diners can choose from pre-designed bowls, including spicy tuna, salmon, and vegetable-based selections, or create their own meal.
Each bowl begins with a spring mix, or rice base, and main ingredient choices of ahi and spicy tuna, salmon, octopus, shrimp, chicken tofu, plus a Ninth Island favorite, Spam, all upgraded with homemade sauces and 25 extra toppings.
Also on its way to the retail hub, the Chinglish Cantonese Wine Bar, moving into the shuttered former home of The Melting Pot.
