In a rapid switcheroo, Diablo’s Cantina is set to open its second Strip outpost within days, moving into the highly visible LVB Burgers & Bar space at the Mirage.
Located close to the Las Vegas Boulevard pedestrian entrance, the cantina will be open for lunch and dinner beginning at 11 a.m. on Monday December 23, and promising “a little decadence” alongside its casual Mexican menu and margarita specials.
A well remembered fixture attached to the frontage of the Monte Carlo until the resort began its 2017 transformation into the Park MGM, the loud and lively bar and restaurant relocated to the Luxor in late 2018.
Appropriate for a makeover lasting less the three months, the interior layout at the Mirage will remain very similar to the former burger restaurant, open to the pedestrian walkway, keeping the roomy booth seating design, and switching up the large murals on the mezzanine level, all upgraded in South-of-the-Border-inspired vibrant colors.
Still to confirm future opening hours, the previewed menu includes guacamole dishes, chicken pozole, Diablo’s chicken wings, taco platters, fajitas, and entrees including tamarind-glazed salmon, a grilled shrimp burrito, and the adobo citrus-marinated grilled Vixen chicken.
