Canter’s Deli fans waited impatiently for the famous delicatessen to return to Las Vegas after departing Treasure Island near the sports book in 2012. It opened at Tivoli Village in 2017, then at The Linq Promenade. Last summer, Canter’s closed at Tivoli Village, and now the location at The Linq Promenade converts into Maxie’s Diner on March 15.
Hospitality Boulevard, the company behind Smoked Burgers & BBQ at the Forum Shops at Caesars, is behind the restaurant that serves from breakfast to late night beneath the High Roller, the world’s tallest observation wheel.
Ryan Klaasen, co-founder and CEO of Hospitality Boulevard, says the name Maxie is based on the idea that “‘Grandma Maxie’ and her food brings back warm and happy memories. We talk about these wonderful memories as we eat the food and these memories are strong because they touch our senses of taste, touch, smell, and the sense of love and happy familiarity in our hearts.”
The company renovated the space into more of a diner with grays and whites as the base with aqua and red pops, a black-and-white checkerboard ceiling, and indoor and outdoor seating.
For breakfast, diners can order cotton candy pancakes, Fruity Pebbles French toast, peanut butter and jelly tacos, a stuffed biscuit and gravy sandwich, and more.
Maxie’s plans to offer a grab-and-go menu where customers can build their own boxed lunches and dinners with options including sandwiches, as well as bagels and cream cheese.
A bar at the front serves pressed juices and cereal-flavored milkshakes.
Maxie’s will be open daily from 7 a.m. to 10 p.m.
