A little switcheroo took place with management of three restaurants at Mandalay Bay. SBE and Disruptive Restaurant Group, a division of SBE, now manage three culinary venues that were part of Hakkasan Group — Kumi Japanese Restaurant & Bar, Red Square Restaurant & Vodka Lounge, and Citizens Kitchen & Bar.
Sam Nazarian, the president of SBE, says the company will continue to expand its dining empire in Las Vegas. Right now, the company manages Hyde Lounge at T-Mobile Arena; Hyde Bellagio; Cleo, Katsuya, Umami Burger, and Bazaar Meat by José Andrés at SLS Las Vegas. Katsuya closes soon to make way for a high-end gaming lounge at SLS.
Kumi with its Japanese menu with a twist of Korean thrown in comes from Akira Back, who features a variety of dishes inspired by his childhood and global travels. Whitefish carpaccio with hirame, rock shrimp tempura with Sriracha ranch, and specialty rolls such as the 007 Octopussy with crab salad, spicy octopus, and crispy potatoes are just some of the dishes on the menu.
Red Square features a statue of a headless Vladimir Lenin at the entrance, a Russian menu, and an icy vodka vault. Chicken Kiev and caviar are some of the Russian dishes, along with pierogis, pelmeni, borscht, and pickled herring. The private vodka vault goes down to negative 5 degrees, with room for six to eight people sampling the favored Russian liquor.
