Ricardo Guerrero, who founded the food truck Slidin’ Thru, takes over The Bunkhouse to open Gaucho’s Sacred Flavors at the bar and music venue just outside of Fremont East. Guerrero, one of the frontrunners of the food truck scene in Las Vegas, teamed up with Gerardo Avalos on this ode to Argentinian food that includes vegan and vegetarian options.
Starters include smashed potatoes with goat cheese and chimichurri for $5, empanadas with meat or veggies for $3, and plant or seafood ceviche for $11.
Diners can order a New York strip sandwich for $15; a choripan, a chorizo hot dog with chimichurri for $8; and a fried chicken sandwich for $8. Plates — served over cotija-lime mixed greens, black beans, charred tomato, and green onion — include a plantain and black bean dish for $10, grilled jumbo shrimp for $18, cauliflower steak for $10, Argentinian chorizo links for $12, and plancho grilled trout for $16.

For dessert, churros for $8 or peach mango empanadas for $3.
Guerrero plans to serve a brunch on Sundays.
