Revealed last December, a trio of casual concepts heading to Spring Valley’s Apache Center are all now close to a debut.
Neighboring each other at the retail center, the first to arrive will be third Las Vegas home for Pancho’s Vegan Tacos, expected to be open by the end of the month.
Serving a menu of “100% vegan authentic Mexican food,” the 3,518-square-foot space at the intersection of Fort Apache and Spring Mountain Road will make ordering even more convenient from its handy drive-thru window. Last month, Pancho’s unveiled its Henderson expansion at 2540 Anthem Village Drive.
Next door, a Cuban restaurant from local restaurateurs The Buddhakai Group has lengthened its name to Cubanidad 1885 and is “finalizing its menu.” Diners can look forward to guava and cheese pastelitos paired with Cuban coffee, “azafrán yellow rice with Cuban chicken soup and chicharrones with casaba fries,” short rib soup, plus Cuban burgers and sandwiches.
And still in the works, but currently hiring, the third local home for California-based Zero Degrees will fill 1,600-square-feet with its “Asian-Hispanic fusion” menu of mangonadas, ube milkshakes, spicy Dole Whip, and hot Cheetos chilote.
